
BRUSSELS SPROUTS with APPLES & SMOKED BACON

Smoked Bacon 4 slices
Brussels Sprouts, shaved 2 cups
Garlic, minced 2 cloves
Apples, diced ½ cup
Fresh Herbs of choice ¼ cup
Apple Cider ½ cup
Sea Salt & Pepper to taste

1. Fry bacon on medium low heat in a skillet large enough to hold all other ingredients. Cook until crunchy. Remove bacon and degrease on a paper towel then chop into small pieces and reserve until just before serving.
2. Reheat the bacon fat and sauté the Brussels sprouts, garlic and lady apple together until tender and bright green (approximately 5 minutes).
3. Add the herbs and salt and pepper toss together then remove into a bowl.
4. Deglaze the sauté pan with cider whisking all the time until it is reduced by half then drizzle the cider reduction over the Brussels sprouts.
5. Toss the Brussels sprouts in the cider glaze then top with bacon crumbles and serve
